Some operations don't scale as well, and while making parameter changes, 
COPs uses 'Fast Interactive Cooking' which scales the image in the 
viewport down by 4x to cook faster. A prewitt or sobel edge detect is a 
3x3 kernel filter, which is difficult to approximate when using proxy 
resolutions. The image is effectively blurred by 4 pixels when shrunk, 
so your edges will be more subdued (and sometimes almost invisible if 
they were faint at full res).

You can turn off fast interactive cooking in the viewport with the 
hotkey 'f' (there is also a toggle button in the upper right, with an 
icon of a mouse cursor & a watch). It's a handy toggle for when you need 
to see the full-res results during interactive cooking.
